Savoury Pancakes / Chillas

These savoury pancakes are wholesome, flavourful, and quick to prepare — perfect for breakfast, snacks, or light meals. Crisp on the outside and soft inside, they pair beautifully with chutney or ketchup.
Ingredients
1 cup green moong dal flour
1/4 cup gram flour (besan)
1 tbsp cheese garlic bread mix or dried mixed herbs
Chilli flakes as per taste or chilli powder
A mix of dried oregano and dried basil leaves
OR
Fresh herbs like finely chopped coriander and mint leaves
Salt — minimal, as the herb mix may already contain salt
1 tsp coriander powder
1/2 tsp cumin powder
1/4 tsp pepper powder
1/4 tsp turmeric powder
Water as required to make a thick batter
Ghee for brushing the pan
Method
In a mixing bowl, combine the green moong dal flour and gram flour.
Add the cheese garlic bread mix or herbs, chilli flakes, coriander powder, cumin powder, pepper powder, turmeric powder, and salt.
Gradually add water and whisk well to make a smooth batter. The batter should be thick enough to spread lightly, but not too runny.
Heat a pan or tawa. Pour a ladleful of batter and gently spread it into a pancake or chilla shape.
Brush the edges with ghee and cook on medium heat.
Sprinkle extra chilli flakes on top if desired.
Once bubbles begin to appear and the base turns golden, flip and cook the other side until crisp and cooked through.
Serve hot with chutney or ketchup.
Serving Suggestion
These savoury pancakes can also be topped with grated cheese and sautéed vegetables
