Samosas are fried pastry with a savoury filling . The fillings for samosas can be vegetarian or non vegetarian . Here is a recipe with a filling of potatoes and green peas mix , can be served with chutney or tomato ketchup.


300gm maida / plain flour / self raising flour

1 teaspoon salt

2 tablespoon ghee ( make the ghee hot) / clarified butter

3/4 cup water( I used approximately 3/4 cup )

1 teaspoon ajwain / carom seeds


Add salt and ajwain to the maida (flour) mix well. Then add the 2 tbsp ghee and incorporate it into the flour well. Add water little by little to form a stiff dough. The dough should not be a soft dough.

Brush the dough with little ghee. Leave to rest for an hour .

Ingredients for the stuffing

9 potatoes ( boil and cook till done, peel off the skin and chop into pieces)

100 grams green peas

11 cloves garlic finely chopped

4 onions finely chopped

3 green chilli finely chopped

1/4 teaspoon hing /asafoetida powder

1/4 teaspoon cumin seeds

1 teaspoon chilli powder

1 teaspoon coriander powder

1/2 teaspoon cumin powder

1/2 teaspoon pepper powder

1/2 teaspoon amchur / dry mango powder

1/2 teaspoon chaat masala powder

1/2 teaspoon garam masala powder

2 teaspoon lemon juice

1/2 cup coriander leaves finely chopped

salt to taste

Method 1

Heat up some oil in a pot, add in the cumin seed and hing. Now add the finely chopped garlic, green chillies and stir fry.

Mix in the finely chopped onions and green peas and continue cooking till green peas are almost done. Add in the spices, salt and the cooked chopped potatoes and mix well.

Add lemon juice and finally the chopped coriander leaves.

Method 2

Make small balls and start rolling out into round shapes, cut into half. (semicircle).

form a cone shape, stuff the cone with the potato mixture . Brush the edges with water and seal properly.

Heat oil to medium and deep fry these samosas till done.
