Quinoa Stir-Fry

A simple, wholesome and flavourful quinoa stir-fry packed with fresh vegetables. Perfect as a light meal, lunch box option or a healthy family dinner.
Ingredients
For the Quinoa
1½ cups quinoa
Water, as required
For the Stir-Fry
1-inch piece ginger, finely chopped
5 cloves garlic, minced
3–4 green chillies, finely chopped
4 large spring onion bulbs, sliced
Spring onion greens, finely chopped
100 g French beans, finely chopped
100 g carrots, finely chopped
1 capsicum, sliced
1 tbsp soy sauce (optional)
Salt to taste
1–2 tbsp oil
Method
Cook the Quinoa
Wash the quinoa well and soak it for 15 minutes.
Drain and cook it with the required amount of water until all the water is absorbed and the quinoa is cooked through.
Fluff with a fork and set aside.
Prepare the Stir-Fry
Heat the oil in a large pan or wok.
Add the ginger, garlic and green chillies. Sauté for a minute until fragrant.
Add the sliced spring onion bulbs and stir-fry for 2–3 minutes.
Add the chopped French beans and carrots. Stir-fry for a few minutes until they are lightly cooked yet retain a slight crunch.
Mix in the sliced capsicum and the chopped spring onion greens.
Add the soy sauce (if using) and salt to taste. Stir well.
Add the cooked quinoa and gently toss until everything is well combined and heated through.
Check and adjust the seasoning if required.
Serve hot as a wholesome meal .
Tip: You can add sweet corn, mushrooms, green peas, broccoli or paneer to make the stir-fry even more nutritious and filling.
