Moong Dal Khichdi

A comforting, nourishing meal, Moong Dal Khichdi is a wholesome dish made from rice and yellow split moong dal (lentils), cooked together with fragrant spices and fresh herbs. Simple yet satisfying, it’s ideal for a light lunch or dinner.


Ingredients

Main Ingredients:

100 grams yellow split moong dal - soak for 6 hours

200 grams rice (pulao basmati rice recommended) - soak for 1 hour

Spice Powders:

1 teaspoon coriander powder

1/2 teaspoon cumin powder

1/2 teaspoon pepper powder

1/2 teaspoon garam masala powder

1/2 teaspoon turmeric powder

Herbs:

1/4 cup mint leaves, finely chopped

1/2 cup coriander leaves, finely chopped

Additional Ingredients:

2 medium onions, finely chopped

1 medium tomato, finely chopped

3 to 4 green chillies, finely chopped

Salt to taste

Clarified butter (ghee)

1 teaspoon ginger garlic paste

Hot water

Method:

1.After soaking the dal for 6 hours, drain and rinse well. Drain and rinse the soaked rice too.

2. Heat ghee in a cooking vessel. Add finely chopped onions and sauté until they turn golden brown.

3. Stir in the chopped tomatoes and cook until they soften. Add green chillies, ginger garlic paste , a portion of the chopped mint, and 1/4 cup coriander leaves.

4. Add the spice powders along with a tablespoon of water. Let this mixture cook for a half a minute to release the flavours.

5.Mix in the moong dal, stirring for a minute. Then add the rice and stir fry for another minute.

6.Pour in enough hot water to allow even cooking of the dal and rice. Adjust salt as needed, adding extra water if required. Once it is nearly done, sprinkle in the remaining mint and coriander leaves.

7. Simmer until the khichdi reaches your preferred consistency.

Serve hot with steamed veggies, tangy pickle, or crispy papads for a complete meal. Enjoy the warm, flavourful comfort of Moong Dal Khichdi!
