The pizza dough is made without adding yeast. In place of yeast , I have added soda bicarbonate ,baking powder and curd { plain yoghurt}.
I have also used two types of sauces for the pizzas , one is the red sauce the other is a simple coriander and mint pesto.
You can use toppings of your choice. Here I have used sausages and ready to heat kebabs.
FOR THE PIZZA DOUGH 500 gms plain flour 1 tsp soda bicarbonate 1/2 tsp baking powder 1/4 cup oil salt to taste 1 1/2 cup curd 1/2 cup warm water
METHOD
Mix the flour ,salt baking powder and soda bicarbonate together with a spatula. Add the oil
Add1/2 cup warm water and mix well. Then add the curd and mix again.
Bring the flour mix onto a working surface and start bring the dough together. Add a tbsp of warm water and knead to a soft dough. while kneading oil the palm of your hand and knead ,add a tbsp of oil to the dough and knead for 3 mins oil a big bowl and place this dough .Brush oil on the dough . Cover with a. moist muslin cloth or lid. Keep in warm place for 30 mins.
Preheat oven to 200 degrees.
Divide dough into 3 parts. Roll each part out. Place in a well brushed oil tray Now add the sauce of choice, cheese ,toppings of your choice. Bake in preheated oven for 25 mins or till done
FOR THE SAUCES
CORIANDER MINT PESTO 20 gms mint leaves 100 gms coriander leaves 3 or 4 green chillies 15 cashew nuts 4 garlic cloves olive oil for grinding
Grind all the above together with the help of olive oil to make a paste. Do not add water
OR RED SAUCE
6 cloves garlic finely chopped 8 (deskin )tomatoes pureed 2 (dskin) tomatoes finely chopped salt to taste chilli powder and pepper powder according to taste 1tsp tomato ketchup 1 tbsp dried oregano
METHOD Add olive oil and stir fry the cloves of garlic lightly. Add the chopped tomatoes and cook till soft Now add the salt to taste, chilli powder, pepper powder, dried oregano and tomato puree. Cook for 2 to 3 mins , lastly add the ketchup and cook for a minute
FOR THE TOPPINGS I used sausages, with red sauce and Aachari chicken kebab for the coriander mint pesto
