Potato Bhaji/Potato Stir Fry

A simple, homely Potato Bhaji that pairs perfectly with puris, dosas, or chapatis — a family favourite every single time!
Ingredients
700 grams potatoes, chopped
4 to 5 medium cloves of garlic finely chopped
1/2 inch ginger finely chopped
3 or 4 green chillies, finely chopped
¼ tsp mustard seeds
¼ tsp cumin seeds
Few curry leaves
½ tsp turmeric powder
Pepper powder, as per taste
Salt, to taste
Generous amount of coriander leaves, finely chopped
Juice of ½ a lime
Coconut oil or any oil of your preference
Method
1. Heat oil in a pan and crackle mustard seeds and cumin seeds.
2. Add ginger, garlic, and green chillies. Sauté until fragrant.
3. Toss in the curry leaves and sprinkle some salt. Give it a good stir.
4. Add the chopped potatoes, stir well, and add a splash of water.
Cover and cook on a low flame until the potatoes are almost done.
5. Add turmeric powder and pepper powder. Mix well.
6. Adjust seasoning and add a generous amount of chopped coriander leaves.
Stir and cook until the potatoes are soft and perfectly coated with flavour.
7. Finish with a squeeze of lime juice and mix gently.
Serve hot with puris, chapatis, or dosas —
a simple, fragrant, and satisfying dish loved by the whole family!
