Pork Curry With East Indian Bottle Masala

Pork Curry With spring onions

A wonderful and easy to prepare pork curry with spring onions , green masala and East Indian Bottle masala.

Served with A broccoli and Bell pepper salad.

Ingredients 1 kilo boneless Pork pieces

Add 2 tsp Turmeric powder, 2 tsp salt and 3 tbsp white vinegar. Mix well into the pork Keep for half an hour.

Wash off well and pat dry

Ingredients for the green masala 1 tbsp coriander seeds 1 tsp cumin seeds 1 /2 tsp pepper corn 1/2 tsp fennel seeds Dry roast the above mentioned spices.

1 big size onion sliced 6 green chillies

Saute the onions till lightly brown, add the green chillies , stir fry.

Once all the above are cool Grind to paste along with 1 tbsp ginger garlic paste 1/4 tsp turmeric powder 1/2 tsp tempero Di Cuddi powder or garam masala powder

Ingredients 2

2 tbsp bottle masala 1 bunch spring onion Sliced the bulbs of the onions and keep aside. Finely chop the greens of the spring onions, keep aside. Oil 4 tomatoes finely chopped 2 big potatoes chopped

Method Using a pressure cooker , add oil , once hot , saute the onion bulbs of the spring onion lightly.

Then add the tomatoes and 1/2 tsp salt ,saute the tomatoes till soft and done.

Mix in the ground green masala and stir fry. Add the 2 tbsp East Indian Bottle masala , stir fry. Add 1/2 cup water and cook this masala for a minute.

Add in the pork pieces, some of the greens of the spring onion . Ps:add water only if required for cooking. Pressure cook on high for 1 whistle then on low for 10 mins. Check for salt, if required add.

Release the steam ,add potatoes and pressure cook on high for 1 or 2 whistle .

Lastly add the remaining finely chopped greens of the spring onion.

For the salad

Boiled Broccoli, mayonnaise, chilli flakes crushed pepper corn and bell pepper.

Mix all the above well.

A powdered spice mix used for flavouring Meat Dishes. Made this Tempero spice powder my way , with a slight change.

Garam Masala 2 (East Indian Tempero ( A seasoning to flavour Dishes) Di Cuddi) Ingredients 100 gms Cinnamon 40 gms cloves 40 gms cardamom 40 gms peppercorns 20 gms Star anise 10 gms Javitri {mace}

10 gms bay leaf 5 gms all spice 5 gms Triphal {schezwan pepper} 10 gms saunf {fennel seeds} 10 gms methi seeds {fenugreek seeds} 10 gms Shah Jeera {black cumin}

Dry ingredients in the sun, lightly roast, Dry grind the spiced , sift well, and bottle used for flavouring Chicken, mutton, beef or Pork
