Goan Sausage And Potato Stir-Fry

Ingredients
500 grams Goan sausages
4 medium-sized onions, sliced
2 medium-sized tomatoes, chopped
1 inch ginger, finely chopped
5 cloves garlic, finely chopped
½ cup fresh dill leaves, finely chopped
2 green bell peppers, sliced
2 to 3 medium-sized potatoes, peeled and chopped
1 to 1½ cups water
Method
Add the finely chopped ginger and garlic to a pan without adding any oil.
Add the sliced onions and Goan sausages. Mix well and stir for a minute.
Pour in ½ cup water and cook on medium flame for about 2 minutes.
Add the chopped tomatoes and potatoes. Pour in another ½ to 1 cup of water and mix well.
Cover and cook until the potatoes are almost done.
Sprinkle in the finely chopped dill leaves and continue cooking until the potatoes are completely cooked and tender.
Finally, add the sliced green bell peppers and give everything a good stir.
Cook for another minute or two, ensuring the bell peppers remain slightly crisp.
Serving Suggestion
Serve hot with chapatis, bread or pulao for a delicious and satisfying meal.
