Palak Paneer (Spinach with Cottage Cheese)

A nutritious dish of tender spinach leaves gently cooked with soft cubes of paneer and simple spices.



Ingredients:

2 bunches spinach (approx. 500 grams after chopping)

500 grams paneer (use 250 grams if preferred)

Salt to taste

For sautéing:

2 big onions, sliced

6 to 8 garlic cloves, sliced

2 to 3 green chillies, slit or chopped

1 tbsp dried fenugreek leaves (kasuri methi), crushed

Spice Powder Mix:

¼ tsp pepper powder

1 tsp coriander powder

½ tsp cumin powder


Method:

1. In a pan, heat oil and sauté onions until translucent.

2. Add sliced garlic and stir until fragrant.

3. Toss in the green chillies and spice powders, stir briefly.

4. Add the chopped spinach and cook until wilted and done.

5. Season with salt, add the paneer cubes, and gently mix.

6. Finish with a sprinkle of crushed dried fenugreek leaves.
