Orange Marmalade Cake


A delicious Tea Time Cake. For this cake I used fresh orange juice , orange zest and orange marmalade . Loved the way it turned out.


Ingredients

125 gms plain flour

100 gms orange marmalade

1/2 cup fresh orange juice

1 tsp orange zest

1tsp baking powder

2 eggs

1 drop of golden yellow colour

1/4 cup oil


Method

whisk the eggs with oil , then add the orange zest and whisk again. Add the powdered sugar and whisk Add the marmalade and whisk again. Now add the orange juice and whisk well till all the ingredients are incorporated well.

Add a drop of golden yellow colour.


Take 125 gm flour, 1 tsp baking powder and sift it into the mixture. fold the flour well into the mixture and then whisk well.

Line a 6inch x 6inch baking dish with parchment paper

Pour the batter into the baking dish and bake in a preheated oven at 180 degrees for 30 mins


Once cooled cut the cake into 4 parts. Then cut each part into half .Spread marmalade on each part.

Close each part like a sandwich.

Apply marmalade again on just on the lower part of the sandwich cake and place the top most part of the cake over the other part.

Slice the cake.

dust with icing sugar.
