Mutton Trotters also known as paya . This is a thick gravy prepared with East Indian Bottle Masala and other spices.
Ingredients
400 gms Mutton Trotters
(4 piece trotters)
Method
My butcher cleaned the payas so well,I was left with just little work with regard to cleaning the payas.
First I washed it well . The next I left it to drain out the excess water in a strainer.
Next I added 1 tsp turmeric powder, 1 tbsp gram flour (besan) ,salt and 1 tbsp white vinegar.
Kept it for 45 mins. Then rubbed it well and washed it thoroughly.
Next in warm water and 1/4 tsp white vinegar , I emmersed these trotters for 20 mins. washed it off well.
Left to drain out excess moisture .
The next step
Pressure cook procedure
Add
1/2 tsp chilli powder
1/4 tsp turmeric powder
1/2 tsp coriander powder
Salt to taste
Mix these powdered spices to the paya along with the salt.
Add this into the pressure cooker with just enough water.
Pressure cook for 10 to 15 mins. Reserve the stock from the cooked paya.

Cuddi Masala
3 green chillies
1 tsp ginger garlic paste
1/2 tsp garam masala powder
1/4 tsp turmeric powder
1 onion sliced
Enough water for grinding.
Grind the above to a smooth paste
Ingredients 3
1 tbsp East Indian Bottle Masala
2 tomatoes finely chopped
2 onions finely chopped
1/4 cup coriander leaves finely chopped
3 green chilies slit
1 tsp white vinegar
Method
Heat up some oil, once hot add the finely chopped onions and stir fry till lightly brown.
Then mix in the finely chopped tomatoes and a little bit of salt and some of the reserved stock . Cook till tomatoes are soft.
Add the cuddi masala paste and stir fry on medium flame. Add the East Indian Bottle Masala and some reserved stock. Allow this masala to cook, after sometime add the slit green chilies and the trotters/paya and mix well.
Cook for a minute, then add the finely chopped coriander leaves and some amount of water.
Allow to cook for another 15 to 20 mins occasionally stir frying.
Lastly add the vinegar , cook for another 5 to 10 mins.
