Guvar and Carrot Foogath

A light, nutritious, and satisfying meal made with fresh vegetables and simple flavours -Guvar (Cluster beans )and Carrot Foogath ,enjoyed just as it is without chapatis, making it perfect for both a home lunch and a lunch box meal.


Guvar and Carrot Foogath

Ingredients

500 grams Guvar cleaned, washed, patted dry and chopped

2 carrots, peeled, washed, patted dry and cut into sticks

2 green chillies, finely chopped

Salt to taste

½ cup freshly grated coconut

2 medium onions, finely sliced

4 cloves garlic, mashed

Coconut oil as required

Method

Heat coconut oil in a cooking vessel.

Add the mashed garlic and sauté for a few seconds.

Add the sliced onions, chopped guvar and carrot sticks.

Toss well and cook on a medium flame, stirring occasionally.

When the vegetables are almost cooked, add the chopped green chillies and salt to taste.

Continue cooking until done.

Add the freshly grated coconut and cook for another minute.

Serve hot.
