Mutton liver fry (East Indian Mutton Liver Fry)

This recipe combines tender mutton liver with a blend of aromatic spices , addition of spring onions and tomatoes that adds freshness and texture, making this dish a perfect accompaniment to rice or East Indian hand breads /aapas or chapatis.


Ingredients


250 grams mutton liver


2 green chillies


1 big onion sliced


1/2 tsp turmeric powder


1 teaspoon of coriander powder


1/2 teaspoon of pepper powder


1/2 teaspoon of cumin powder


1/2 teaspoon of garam masala powder


Salt to taste


1 tomato sliced


5 bulbs of spring onion along with the greens



Method


Step 1


Cut the mutton liver into small bite size pieces. Add 1 teaspoon of turmeric powder, 1 teaspoon of vinegar and keep aside for at least half an hour. After half an hour wash well and keep aside.



Step 2


Heat up a tablespoon of oil and saute 1 sliced onion until they turn translucent.


Grind to paste the 2 green chillies, 1/2 teaspoon of turmeric powder and the fried sliced onions to a paste.



Step 3


Add some amount of clarified butter to a pan . Add the ground masala and 1/2 cup water and stir fry for a minute.



Step 4


Add the coriander powder, cumin powder, pepper powder , salt to taste and garam masala powder and mix well. Add the mutton liver and stir fry. Add 1/2 cup water and the 5 whole onion bulbs. Allow to cook for a minute.



Step 5


Add the greens of the spring onion, and sliced tomatoes and cook till done to your liking.



Step 6


Finally add some finely chopped coriander leaves and 1/2 teaspoon of vinegar
