Mutton Sukha



Mutton Sukha made with East Indian bottle masala and other spices.



Ingredients

600 gms Mutton pieces

wash the mutton well, add salt , turmeric and some vinegar. Mix well and keep for 15 mins.

wash again and pat dry.



Ingredients 2

1 tbsp East Indian Bottle Masala

1 tsp Ginger garlic paste


Add this to the mutton pieces and keep for 20 mins. Heat up a tbsp of ghee in a pressure cooker.

Add the marinated mutton pieces and stir fry for 1 and 1/2 minute. Add just enough water, salt to taste.

Pressure cook on high for 1 whistle and completely low for 5 to 10 mins till the mutton is cooked.

Reserve the water of the cooked mutton



Ingredients

for the ground masala

2 tbsp desiccated coconut

1/4 tsp sesame seeds

1/4 tsp poppy seeds

1 medium size onion



Method


Dry roast the desiccated coconut, sesame seeds, poppy seeds. Add a little bit of oil and stir fry the finely sliced onion till lightly brown. Once cool , Grind to paste with some amount of water.



Ingredients

1 tbsp East Indian bottle masala and another 1 tsp East Indian bottle masala

3 to 4 green chilies finely chopped

8 coves garlic finely chopped

1 inch ginger finely chopped

few curry leaves

3 medium size onions sliced

1 tomato sliced

1/4 cup finely sliced coriander leaves



Method


Heat up 3 tbsp ghee , add the curry leaves , allow it to splutter then add the finely chopped garlic, ginger and green chilies. Stir fry for a minute on medium flame. Add the sliced onions and stir fry till translucent. Mix in the ground coconut paste and mix well. Add the bottle masala and mix well.

Add some of the mutton stock and allow to cook for a minute. Then add in the cooked mutton pieces , mix well ,salt if required.

Lastly add in the sliced tomatoes and allow to cook for another 15 mins.

Lastly Sprinkle in some finely chopped coriander leaves.
