My dear Friend Zilpher D'silva mentioned to me yesterday that she adds Guvar to the mutton curry, wow ! I said going to give it a try. Here is my version of this mutton curry with cluster beans,
I added potatoes with its skin to the curry too.
Alternative to cluster beans is french beans.
Ingredients
500 gms mutton
cleaned and washed well.
Marinate the mutton with 1 tsp chili powder , Salt to taste and 1/2 tsp ginger garlic paste
keep for half hour
For the masala
5 kashmiri chilies
1/2 tsp pepper corn
1/2 tsp cumin seeds
1/2 inch cinnamon
3 cloves
1 onion
1 tsp ginger garlic paste
5 cashew nuts
grind all the above to a paste with just enough water
Ingredients
150 gms guvar , cleaned and chopped into just two pieces.
2 potatoes with its skin chopped roughly
2 tomatoes chopped fine
2 onions chopped finely
Method
Boil the guvar with just enough water till almost done.
Add the marinated mutton pieces and pressure cook on high for first whistle then low for 10 mins.
Add the chopped potatoes with its skin to the cooked mutton and pressure on high for 1 whistle
Method
heat up some ghee and stir fry the onions till lightly browned.
Add the finely chopped tomatoes and some of the cooked mutton stock and cook till the tomatoes are soft and done
Add the ground masala and stir fry for 1/2 a minute
add the boiled guvar , cooked mutton and potatoes
salt to taste
Cook for another 10 mins.
