Mutton Vindaloo with Goan Vindaloo masala - a festive delight !
Who doesn't love a rich flavourful vindaloo ,especially during the festive season? While pork vindaloo often takes the spotlight , this time I decided to try a Goan style Mutton vindaloo , and it turned out to be an absolute winner!
Ingredients 1 kilo mutton pieces Cleaned and washed well. Add very little turmeric ,salt and little vinegar. Keep aside. After half an hour wash well and pat dry. For the vindaloo masala 12 Kashmiri chillies 1tbsp cumin seeds 1 tbsp ginger and garlic paste 4 cloves 1 inch stick of cinnamon 1 tsp pepper corn 1/4 tsp turmeric powder 1/4 cup apple cider vinegar /coconut toddy vinegar 1 onion sliced Grind all the above to paste adding some amount of water to make a smooth thick masala and keep aside. Ingredients 2 250 gms onions sliced 250 gms tomatoes finely chopped 3 or 4 Green chillies slit Take a Pressure cooker, heat up some oil. Add the finely sliced onions and stir fry till lightly browned .Then add the tomatoes finely chopped and cook stirring occasionally till soft. Mix in the ground masala and stir fry for a minute on low flame. Now add in the Mutton pieces and stir fry on low flame for a minute add the slit green chillies and some amount of water. Add little bit of salt . Pressure cook on high them low for 10 mins. Adjust the seasoning. Now add the potatoes and pressure cook on high for 2 whistles.
