Mix Berry Jam crumble Cake

A lovely mix berry jam cake that is simple and easy to prepare, topped with a buttery crumble for added texture and flavour.
Ingredients
Cake Batter
125 g plain flour (maida)
120 g mixed berry jam
½ tsp baking powder
¼ tsp soda bicarbonate
100 g caster sugar (or powdered sugar)
¼ cup oil
2 eggs (room temperature)
½ tsp vanilla essence
¼ cup warm water
Crumble Topping – Option 1 (More Crumble)
80 g plain flour (maida)
80 g fine brown sugar
40 g cold butter, cut into cubes
Crumble Topping – Option 2 (Less Crumble)
60 g plain flour (maida)
60 g fine brown sugar
30 g cold butter, cut into cubes
Method
Prepare the Cake Batter
1. In a bowl, add oil, eggs, and caster sugar. Whisk well until combined.
2. Add the mixed berry jam and mix again using a hand whisk.
3. Sift together plain flour, baking powder, and soda bicarbonate.
4. Add the sifted flour mixture to the egg mixture and gently mix using a spatula.
5. Add warm water and vanilla essence. Whisk lightly until you get a smooth batter.
Prepare the Crumble
1. In a bowl, add flour, fine brown sugar, and cold butter.
2. Using your fingertips, rub the mixture together until it resembles breadcrumbs.
Assemble & Bake
1. Pour the batter into greased cake tin(s).
2. Sprinkle the crumble evenly over the batter.
3. Bake in a preheated oven at 180°C for 20–30 minutes or until a skewer inserted comes out clean.
OTG Tip: Use only the lower heat. Avoid top heat as it may burn the crumble.
Notes
The batter can be divided into two small cake tins.
If making two cakes, use Crumble Option 1.
For one cake, Crumble Option 2 is sufficient.
