This is a lovely mix berry jam cake . Simple and easy to prepare. Here too have used a crumble for this cake.
The crumble consist of a mix of maida { plain flour} , fine brown sugar and cold butter .
Ingredients
125 gms plain flour (maida)
120 gms Mixed Berry Jam
1/2 tsp baking powder
1/4 tsp soda bicarbonate
100 gms caster sugar
1/4 cup oil
100 gms caster sugar or powder sugar
1/2 tsp Vanilla essence
2 eggs
For the crumble (1)
80 gms maida
80 gms fine brown sugar
40 gms cold butter cut into cubes
or
crumble 2
for less crumble divide quantity into half
60 gms maida
60 gms fine brown sugar
30 gms cold butter cut into cubes
Method
In a bowl add oil , eggs , and caster sugar and whisk.
Then add the jam and mix well using the hand whisk.
Add to the plain flour baking powder and soda bicarbonate and sift.
Add this flour mixture to the egg mixture and mix using a spatula ,then add 1/4 cup warm water , vanilla essence and whisk well.
For the crumble
Using your fingertips mix the fine brown sugar , flour and butter together till it forms a breadcrumbs like mixture.
Sprinkle this mixture all over the cake.

I divided the batter into two small cake tins
hence used crumble 1
for one cake crumble 2
Bake in a preheated oven at 180 degrees for 20 to 30 mins or till done. If using an OTG ,use only the lower heat and not the top heat.
