METHOD
Preparing the Chicken Mince
Heat a little oil in a pan. Add the finely chopped onions and sauté until translucent.
Add the chicken mince and stir-fry well, breaking up any lumps.
Mix in the finely chopped tomatoes and stir-fry.
Cover and cook until the mince is almost done, stirring occasionally.
Add the Gochujang paste and soya sauce. Mix well.
Check the seasoning and add salt if required.
Finally, add the chopped green chillies and coriander leaves. Stir-fry well and set aside.
Assembling the Chicken Mince Melt
Take a pizza base and spread a layer of cheese sauce over it.
Drizzle some sweet chilli sauce and sprinkle a generous layer of pizza cheese.
Spread the prepared chicken mince evenly over the base.
Top with chopped bell peppers, gherkins and another generous sprinkling of pizza cheese.
Cooking
Heat a pan and brush it generously with butter.
Place the prepared base in the pan.
Cover and cook on low heat until the base is crisp and the cheese has melted.
Finish with a drizzle of chilli oil before serving.
Serve hot and enjoy this cheesy, spicy weekend treat!
Cook it on a low flame with the pan covered. This will help melt the cheese without burning the bottom of the base.
