Irish Soda Bread is a quick bread in which soda bicarbonate is used as a leavening agent instead of yeast.
Ingredients are flour , soda bicarbonate , salt and buttermilk.
Here I have made a slight change to the usual traditional Irish Bread , I have used 1 egg. I have used 1 cup curd and 1 cup lukewarm water , by doing this I get good buttermilk.
Irish Soda Breads are ideal for stews and casseroles also went really well with Goan sausages.
INGREDIENTS 3 cups plain flour 1 cup curd 1 cup lukewarm water 1 tsp soda bicarb 1 egg 2 small onions( stir fry the finely chopped onions till translucent with little oil) 1/2 cup finely chopped coriander leaves Salt to taste 1 tsp sugar
METHOD Add salt, sugar to the plain flour. Add the curd , lukewarm water, soda bicarb, stir fried onions and coriander leaves and the egg. Start mixing well with the help of a spatula. Bringing everything together. Add some oil to your palm of both hands and bring the dough together. The dough is a sticky dough mix Make it into a ball shape. Make cross cut lightly on top of the dough. Brush a baking tray with oil and dust with flour. Place the bread in the baking tray. Cover with foil. Bake in a preheated oven at 220 degrees For 20 mins . Then remove foil and bake till done. It will brown on top and when poked with a knife it will come out clear
FOR THE SAUSAGES
1/4 kg sausages. Removed from their casings 5 onions sliced 1 green chilli finely chopped 2 tomatoes sliced Mix all the above ingredient together And cook adding very little water. Cook on low flame
When done add 1 capsicum finely chopped.
