Greek Salad

A fresh, vibrant and wholesome Greek Salad—my husband’s special, and one we always enjoy at home.
Made with crisp vegetables, juicy tomatoes, olives, and creamy feta cheese. Tossed in a light dressing of olive oil, oregano, and apple cider vinegar, this salad is full of flavour yet incredibly simple to prepare.
Perfect as a light meal or a refreshing side, it’s a healthy dish that comes together in minutes and never fails to satisfy.

Ingredients:
1/2 cup black olives
1 large onion, sliced
2 small tomatoes, chopped
1 medium bell pepper, chopped
1 cucumber, chopped
Feta cheese (as required)
Chilli flakes (optional)
Dressing:
3½ tbsp olive oil
2 tbsp apple cider vinegar (Substituted the traditional red wine vinegar with apple cider vinegar for a milder, slightly fruity twist)
1 tsp dried oregano
1/2 tsp pepper powder
Salt to taste
Method:
In a large bowl, add the chopped cucumber, tomatoes, onion, olives, and bell pepper.
In a separate bowl, prepare the dressing:
Mix together olive oil, apple cider vinegar, oregano, pepper powder, and salt. Whisk well until combined.
Pour the dressing over the vegetables.
Add crumbled feta cheese and sprinkle some chilli flakes (optional).
Toss everything gently until well mixed.
Tips:
Use chilled vegetables for extra freshness.
Add feta just before serving to keep it soft and creamy.
You can also add a few lettuce leaves if you like more volume.
