Fried Chicken Wings with Masala Rice

Ingredients
For the Chicken Wings
700 grams chicken wings
1 tsp chilli powder
1 tsp cumin powder
1 tsp garam masala powder
1/2 tsp brown sugar
1/2 tsp mustard sauce
2 tsp ginger powder
1/2 tsp garlic powder
1 tsp apple cider vinegar
2 tsp oil
For the Masala Rice
2 cups basmati rice (soaked and drained)
2 medium onions, sliced
2 medium tomatoes, sliced
1/2 cup mint leaves
1 cup finely chopped coriander leaves (reserve some for garnish)
1/2 cup dried kasuri methi
100 grams green peas (or as preferred)
1 tbsp ginger garlic paste
2 green chillies, finely chopped
Clarified butter (ghee) for cooking
Spice Powders
1 tbsp Shaan chicken masala
1 tsp coriander powder
1/2 tsp cumin powder
1/4 tsp turmeric powder
1/4 tsp garam masala powder
Salt as required (adjust since masala already contains salt)
Method
1. Prepare the Chicken Wings
In a bowl, mix chilli powder, cumin powder, garam masala, brown sugar, mustard sauce, ginger powder, garlic powder, apple cider vinegar, and oil.
Coat the chicken wings well with this marinade.
Cover and let it rest for 1 hour.
Shallow fry the wings until golden brown and cooked through.
Keep aside.
2. Prepare the Masala Rice
Heat ghee in a pan and sauté the sliced onions until nicely browned.
Add sliced tomatoes and cook until soft.
Add mint leaves, kasuri methi, green chillies, and chopped coriander leaves (reserve some for later). Mix well.
Add all the spice powders and stir well.
Add ginger garlic paste and sauté for a minute until aromatic.
Add green peas and 1/2 cup water. Cook on low flame for 2 minutes, stirring occasionally.
Add the soaked and drained rice. Mix gently.
Pour hot water (about 1/2 inch above the rice level).
Bring to a boil, then reduce the flame.
Cover and cook on low flame until the rice is almost done.
Sprinkle the reserved coriander leaves.
Cover again and cook for 2 more minutes until fully done.
Serving Suggestion
Serve the hot masala rice with crispy fried chicken wings on the side for a complete, flavourful meal.
