Fried Chicken Served With Couscous And Mashed Potatoes




Chicken thigh pieces marinated with barbecue sauce and a touch of spice , complimented by a perfectly spiced couscous, stir fried french beans and creamy mashed potatoes. My family's approval says it all



For the fried chicken


800 grams of chicken thigh pieces.


Clean and wash well. Pat dry.



Make three slits on each of the chicken thigh pieces.



For the Marination


3 tablespoons of barbecue sauce


1 teaspoon of chilli powder


2 teaspoons of ginger garlic paste


1/4 cup whisky (50 ml)


Mix all the above thoroughly. Add this marinade to the chicken and keep aside.



Ingredients


1 bunch of finely chopped spring onions


4 green chillies slit into half


2 tablespoons of barbecue sauce



Method


Step 1


Heat up some oil in a pan, fry the chicken pieces well till done. Remove and keep aside.



Step 2


In the same pan, lightly sauté the bulbs of the spring onion. Add in the slit green chillies , remaining marinade and 2 tablespoons of barbeque sauce. Cook on medium flame for 2 minutes , occasionally stirring.



Step 3


Toss in the fried chicken and the greens of the spring onion. Cook for 2 minutes on medium flame.



For the couscous


1 cup couscous


2 onions finely chopped


2 tomatoes finely chopped


3 green chillies finely chopped


Salt to taste


Hot water


2 teaspoons of ginger garlic paste


1/4 cup finely chopped coriander leaves



Spice mix


1 teaspoon of coriander powder


1/2 teaspoon of cumin powder


1/2 teaspoon of pepper powder


1/4 teaspoon of turmeric powder


1/2 teaspoon of garam masala powder



Method


Step 1


Heat up some oil and butter in a pan. Sauté the onions till lightly brown.



Step 2


Mix in the finely chopped tomatoes and cook, occasionally stirring. Once soft , add in the ginger garlic paste, spice mix and salt to taste.



Step 3


Mix in the couscous. Add in the hot water 1 inch above the couscous. Cover and cook on low flame until all the water is absorbed.


Finally, sprinkle in finely chopped coriander leaves.



For the Mashed potatoes


Boil potatoes until done. Grate the boiled potatoes. Add in some melted butter and mix thoroughly. Finally, add in salt and pepper to taste.



For the french beans


Lightly sauté the french beans, mix in some dry herb mix, salt and pepper to taste
