Crumb Fried Parmesan Chicken With Pasta Salad And Stir Fry Vegetables

Chicken steaks coated with a cheese and a crumb coating of cornflakes and breadcrumbs served with assorted veggies and a pasta salad.




INGREDIENTS 1


600 gms chicken boneless breast

Take a sharp knife and slit the breast pieces into steak like size

Place these slices on to a upside down plate. Place another plate on the chicken slices and put some weight this helps to drain out excess water.

Keep for 15 mins.

Then place these slices on a parchment paper or clingfilm. Place another parchment paper or cling film on the top of the chicken. Start to hit it with a rolling pin or steak pounder or mallet. It will flatten out.

Remove the clingfilm or parchment paper.


INGREDIENTS 2


SPICE POWDER

2 tsp garlic powder

2tsp Onion powder

2 tsp coriander powder

2tsp chilli powder

1tsp garam masala powder

1tsp pepper powder

2 tbsp Parmesan cheese powder.

mix all this together


3 Eggs well whisked ,a tsp of chilli powder mixed and whisked well

2cup rice flour

2 cup cornflakes , ground

4 slices of bread ,toasted then ground into powder

4tbsp parmesan cheese powder


ADD MORE OF THIS IF REQUIRED TO COAT THE CHICKEN


METHOD

Mix the powdered cornflakes, breadcrumbs and parmesan cheese powder well.


Apply the spice rub onto the chicken slices well.

Then dust with rice flour then dip in egg mixture and then into the powdered cornflakes and breadcrumb parmesan mix

Press with your finger the cornflake , breadcrumbs and parmesan mix powder onto the chicken slices.so that it sticks well onto the slices.

Pressing helps the crumbs to seep into the chicken slices thus after frying a crispy crunchy crust.

Place on a parchment paper ,cover and refrigerate for half hour.


Then shallow fry the chicken slices well. They don't take time to be cooked ad they are thin slices.


FOR THE SALAD

5 Handful pasta

Boiled and cooked

Few black or green olives

And mayonnaise sauce accordingly

chilli sauce and tomato ketchup accordingly.


Mix all of this together. Add pepper and salt.



FOR THE VEGETABLE STIR FRY

Ingredients

100 gms French beans

1 big Carrots chopped

4 small size potatoes shallow fry

4 mashed garlic cloves


METHOD

Add a bit of oil and butter. Add 4 mashed garlic

stir fry the french beans and carrots lightly.

then lastly add the fried potatoes . add pepper and Salt to taste.
