Eggplant with Mince and Cheese Served With Pasta

Stuffed eggplants with chicken mince topped with lots of cheese and a penne pasta for lunch.



Ingredients 1

2 big size eggplants halved.


Method

Sprinkle cut surface of eggplants with salt , let it stand for 30 mins. Rinse eggplants , pat dry with absorbent paper .Brush cut surface of eggplants with oil ,place on a tray lined with parchment paper. Bake in a preheated oven at 200 degrees Celsius for about 40 mins or until tender.

Cool for 10 mins

Scoop the flesh from the eggplants leaving 5mm shells.

Chop the flesh.


Ingredients 2

For the mince:

3 onions finely chopped

4 tomatoes peel off the outer skin and finely chop

2 green chillies finely chopped

1 tbsp ginger garlic paste

1/2 cup red wine

1/4 cup finely chopped coriander leaves

11/2 to 2 tsp East Indian bottle masala

1tsp garam masala powder

or

Chilli powder according to taste

1tbsp coriander powder

1tsp cumin powder

1/2 tsp turmeric powder

1tsp pepper powder

and 1tsp garam masala powder.

1 big bowl or according to choice pizza cheese.


Method 2

Heat up some oil add 2 tbsp butter. Add the finely chopped onions and lightly brown them. Then add the finely chopped tomatoes and finely chopped green chillies and cook till soft. Add now the ginger garlic paste paste and the bottle masala and garam masala

or if u are not using bottle masala add the spice powders mentioned

Add the red wine and allow to cook for a minute on medium flame

Then add the mince and mix well. Add salt to taste. Let the mince cook for for 10 mins. Then add the chopped eggplant flesh and mix well.

Lastly add the finely chopped coriander leaves.

Allow to cool.


Method 3

Sprinkle some pizza cheese on the bottom of the eggplants. Then add the cooked mince mixture. Sprinkle some more cheese on the mince mixture well.

Place these stuffed eggplants on the tray lined with parchment paper and bake in a preheated oven at 200 degree Celsius for about 20 to 30 mins or until the cheese melts.


FOR THE PASTA

Ingredients for the sauce

12 medium size tomatoes remove skin and puree

6 garlic cloves finely chopped

1 tbsp dried basil

1 tbsp dried oregano

1/2 cup red wine

chilli powder according to taste

1 tsp pepper powder

1/2 tbsp butter

1 tsp. oil


Method

Heat up oil and butter. Add the finely chopped garlic and lightly fry them. Then add the tomato puree and cook for a minute. Then add the wine , the basil and oregano. Cook for another a minute. Add the chilli powder and pepper powder and the stock cube. Cook for 5 mins.


Ingredients

250 gms penne pasta cooked

2 big capsicum thinly sliced

3 to 4 tbsp sliced black olives

1/ 2 tbsp butter

and little bit of oil


Method

Stir fry the sliced capsicum lightly in a mix of butter and oil.

Add the sliced olives.

Mix all this to the prepared sauce.

Add this to the penne pasta.

place all this in a glass dish.

sprinkle in some pizza cheese or parmesan cheese.

Heat up in a microwave for 2 to 3 minutes till cheese melts
