An East Indian cake made with wheat flour and Rice flour , gave it a marble effect. Though rice flour is added to this recipe , it still gives a soft spongy and yumm flavour. Equal quantity of rice flour and wheat flour is used and the yolks are separated from the whites. Different colours are added to give a lovely look to this cake. Do try this recipe , you will definitely love it.
Ingredients 100 gms wheat flour 100 gms Rice flour 200 gms unsalted butter , melt the butter 200 gms caster sugar 4 eggs , separate the yolks from the whites whisk the whites with a pinch of salt to stiff
1/2 tsp baking powder 1/4 tsp soda bicarbonate 1 tsp Vanilla essence
Method Sift the wheat flour, Rice flour, soda bicarbonate and baking powder twice. keep aside.
whisk with an electric hand mixer the egg yolks, sugar and vanilla essence to a creamy texture.
Add the sifted flour mix and fold using a spatula.
Now add the melted butter and fold again ,till well incorporated.
Lastly add the stiff egg white mixture and fold gently. Use an 8 inch diameter tin, line with parchment paper.
For the marble effect Make three parts , add different colours of your choice to the batter. Line the baking tray with parchment paper. Take one Colour and put two tablespoon of this colour in the centre of the tin. Then take the second colour and put two tablespoon of it in the centre of the tin on top of the first colour, follow the same procedure for the third colour. And repeat the procedure till all three colours have been used.
bake in a preheated oven at 180 degrees in a round 8inch diameter tin approximately 40 mins.
