Drumstick & Potato Bhaji | Simple Homestyle Goodness
A simple, wholesome and flavourful vegetable bhaji made with tender drumsticks, potatoes, tomatoes and aromatic spices. Perfect with hot chapatis for a comforting home-cooked meal.
Ingredients
4 drumsticks, cleaned and chopped
½ kg potatoes, peeled and cubed
2 to 3 onions, sliced
2 tomatoes, sliced
2 green chillies, finely chopped
1 tsp coriander powder
½ tsp cumin powder
½ tsp turmeric powder
Salt to taste
¼ cup finely chopped coriander leaves
½ tsp lime juice
Oil, as required
Method
Cook the drumsticks:
Bring the chopped drumsticks to a boil and cook until tender. Drain and keep aside, reserving a little of the cooking water.
Sauté the onions:
Heat oil in a pan or vessel. Add the sliced onions and sauté until lightly browned.
Cook the potatoes:
Add the cubed potatoes and stir-fry for a few minutes.
Add the finely chopped green chillies and stir-fry. Sprinkle in a little water to help the potatoes cook.
Add the sliced tomatoes, mix well and allow everything to cook.
When the potatoes are almost done, add salt, coriander powder, cumin powder and turmeric powder. Mix well and cook until the potatoes are completely done.
Add the drumsticks:
Gently add the cooked drumsticks along with a very small amount of the reserved cooking water. Mix carefully and allow it to simmer for a few minutes.
Finally, add the chopped coriander leaves and lime juice. Give it a gentle stir and switch off the flame.
Serving Suggestion
Serve hot with chapatis for a simple and delicious homemade meal.
