Drumstick Curry

Drumstick Curry that's perfect for an everyday family meal. Made with tender drumstick pieces, a freshly ground green masala, and a touch of East Indian Bottle Masala, this curry is packed with authentic homemade flavours.
Ingredients
For the drumsticks
300 grams drumsticks, cleaned and cut into pieces
Water for boiling
For the green masala
2 green chillies
20 grams fresh coriander leaves
1 onion, sliced
1 tsp ginger-garlic paste
For the curry
2 medium onions, finely chopped
2 medium tomatoes, finely chopped
1 tbsp East Indian Bottle Masala powder
Salt to taste
2 tbsp oil
Water or reserved drumstick stock, as required
Method
Boil the drumstick pieces in just enough water until tender. Reserve the stock and set aside.
Grind the green chillies, coriander leaves, sliced onion, and ginger-garlic paste to a smooth paste. Set aside.
Heat oil in a pan. Add the finely chopped onions and sauté until lightly browned.
Add the chopped tomatoes and salt. Cook until the tomatoes turn soft and mushy.
Add the prepared green masala and sauté for a minute. Pour in ½ cup water and cook for another minute.
Mix in the East Indian Bottle Masala powder and stir well.
Add sufficient water or the reserved drumstick stock to achieve a curry consistency. Simmer for a minute, stirring occasionally.
Add the boiled drumstick pieces and mix gently.
Adjust the consistency if required and cook for 2–3 minutes.
Serve hot with chapatis
