Dried Cranberry Cake

Dried Cranberry Cake for tea. Simple basic cake with dried cranberries make a good tea time treat for my family. This cake was really a winner , dried cranberries added to the simple cake batter tasted yummilicous .



INGREDIENTS

100gms plain flour 1/2 tsp baking powder 3 pinch soda bicarbonate /less than a 1/4 tsp Sift all together and keep aside

80 gms caster sugar 80 gms cranberries cut into half. Dust with 1/2 tsp flour 1 small size egg 50 gms butter. Melt the butter and keep 3 tbsp lukewarm water

Few extra dried cranberries for Sprinkling on the top.(dust with very little flour)



METHOD

Using a hand whisk, whisk the egg and caster sugar together till creamy texture. Mix in the sifted flour little by little. Add 3 tbsp of lukewarm water. Add the melted butter bring to a thick batter consistency by whisking. Now fold in the cranberries into the batter.

Preheat oven to 180degrees. Line a baking dish(5 inch) with parchment paper. Pour the batter in. Sprinkle in some chopped cranberries. Bake at 180degrees for 30 mins or till done.
