A simple, wholesome and flavour-packed stir fry made with dehydrated green peas, fresh coriander leaves and mild spices. This easy summer special can be enjoyed on its own, paired with fried chicken or topped with crunchy farsan for added texture.
Ingredients
For the peas
300 grams dehydrated green peas
Preparing the peas
Wash and soak the dehydrated green peas for up to 6 hours.
Boil in sufficient water until soft and cooked through.
Approximate cooking time: 45 to 60 minutes.
Boiling gives the peas a lovely soft texture while still holding their shape beautifully.
For the stir fry
4 onions, finely chopped
3 to 4 green chillies, finely chopped
1/2 cup finely chopped coriander leaves
1 tbsp Amul garlic butter
Oil for cooking
Salt to taste
Spice powders
1 tsp cumin powder
1/2 tsp pepper powder
1/4 tsp turmeric powder
1/4 tsp chilli powder
1/4 tsp chaat masala powder
Method
Heat oil in a pan and sauté the finely chopped onions until lightly brown.
Add the green chillies and all the spice powders. Stir well for a minute until aromatic.
Add some of the chopped coriander leaves, salt to taste and the garlic butter. Mix well and cook for 2 minutes.
Add the boiled green peas and toss gently so the masala coats the peas evenly.
Finally, add the remaining coriander leaves and give it a final stir.
Serve hot as is, pair it with fried chicken or top it with farsan for a delicious crunchy finish.
