Croquettes

Crispy on the outside and soft, flavourful on the inside, these homemade chicken croquettes make a delicious snack, appetizer, or tea-time treat. Lightly spiced with fresh herbs, green chillies, and warm spices, they are shallow fried until beautifully golden and crisp.
Ingredients
400 grams chicken mince
2 to 3 green chillies, finely chopped
1 onion, finely chopped
Few mint leaves, finely chopped
½ cup coriander leaves, finely chopped
1 tsp coriander powder
½ tsp chilli powder
½ tsp pepper powder
½ tsp cumin powder
¼ tsp garam masala powder
Salt to taste
Juice of ½ lemon
1 tbsp ginger garlic paste
½ beaten egg
1 tbsp breadcrumbs
For Coating
Fine semolina (rawa), as required
Method
Heat a little oil in a pan and sauté the onions and green chillies until soft.
Add the chicken mince and stir fry well until cooked and dry.
Add the mint leaves, coriander leaves, ginger garlic paste, coriander powder, chilli powder, pepper powder, cumin powder, garam masala powder, and salt. Mix well and continue cooking for a few minutes.
Add the lemon juice and stir well. Switch off the flame and allow the mixture to cool completely.
Once cooled, grind the mixture into a coarse paste.
Transfer to a bowl and mix in the beaten egg and breadcrumbs.
Shape the mixture into croquettes. Roll each croquette in fine semolina (rawa) until evenly coated.
Shallow fry in a little oil until golden brown and crisp on all sides.
Serve hot with ketchup, mayonnaise, or your favourite dip.
