Chimichurri

A vibrant, fresh and flavour-packed condiment that instantly elevates any dish. Made with fresh coriander, herbs, olive oil and vinegar, this easy chimichurri is perfect as a topping, dip or marinade.
40 grams fresh coriander leaves, finely chopped
1 small onion, finely chopped
1 tbsp chilli flakes (or as per taste)
1 tbsp dried oregano
2 tbsp lime juice or apple cider vinegar
Generous amount of olive oil
Salt, to taste
Pepper, to taste
Method
Place the chopped coriander, chilli flakes (or jalapeños/green chillies), and dried oregano in a bowl.
Add the olive oil and apple cider vinegar (or lime juice).
Season with salt and pepper.
Mix everything well until thoroughly combined.
Allow the chimichurri to rest for 10–15 minutes before serving to let the flavours blend together.
