A basic Chicken stew with vegetables, herbs and spices.
Ingredients 500 gms chicken 3 spring onions 3 green chilli 8 cloves garlic 1 inch ginger 2 tsp thyme 1 tsp coriander powder 1/2 tsp pepper powder 1/4 tsp turmeric powder 2 tomatoes puree 1 Stock cube 1 /2 tsp cinnamon powder 1/4 tsp cardamom powder 1 /4 tsp nutmeg powder 1 carrot 1/2 cup peas 2 potatoes 3 tbsp oil 1/4 cup Red wine
Method
Saute the finely chopped bulbs of the spring onions lightly along with the finely chopped garlic , ginger and green chillies.
Add in the coriander powder, pepper powder, thyme , cinnamon powder , cardamom powder, nutmeg powder and turmeric powder.
Then add tomato puree and stock cube.
Saute well.
Next add the marinated chicken pieces and saute.
Add in 2 cups of water , 1/2 cup of the spring onion greens , potatoes , carrots and peas.
Allow to cook on medium flame till almost done.
Adjust salt if required and add 1/4 cup red wine.
Once done mash few cooked potatoes cooking in the stew . This will give the stew natural thickness instead of adding corn flour slurry.
Cook till done.
