A simple keema curry with Red wine and basic spices.
Ingredients 1
for the paste
Stir fry in little oil
20 gms ginger finely chopped
5 green chilies finely chopped
8 garlic cloves finely chopped
After stir frying all the above ingredients add 1/4 cup water and grind to paste
Ingredients 2
1 kilo chicken mince
4 onions (400 gms) finely chopped
6 tomatoes (300 gms) finely chopped
spices
3 tsp chili powder or according to taste
1/2 tsp Pepper powder
1/2 tsp garam masala Powder
1/4 tsp turmeric
1cup water
1 cup red wine
1 or 2 tsp apple cider vinegar
(if using any other vinegar add justv1 tsp vinegar)
Method
Stir fry the finely chopped onions till lightly browned .Add the finely chopped tomatoes and Little bit of salt. cook till tomatoes are soft . Add the ground paste (ingredients 1) and 1 cup water.
Allow to cook on medium flame stirring occasionally for a minute. Now add the spices mentioned above. Cook for a minute. Add the mince and mix well . Add the 1 cup wine and allow to cook for 15 mins on medium flame.
Add salt to taste, turmeric powder and Apple cider vinegar. Cook for another 15 mins
Lastly add finely chopped 2 tbsp coriander leaves.
