A delicious gravy that goes well with Neer Dosa or just a simple pulao.
The chicken is marinated with the prepared masala,then shallow fried till almost done . The remaining masala is stir fried in ghee , tossing in later the Chicken and cooking till done
Ingredients
500 gms chicken leg pieces
For the masala
15 cashewnuts
3 kashmiri chillies
1 tsp coriander seeds
1/2 tsp cumin seeds
1/2 tsp pepper corn
1/2 tsp fennel
1/4 tsp Fenugreek seeds
Dry roast the above ingredients lightly.
1 onion sliced , add very little oil and fry the onions slices lightly.
1 tsp ginger garlic paste
1/4 tsp turmeric powder
Grind the above mentioned ingredients for the masala with just enough water.
Ingredients
1/2 tsp chilli powder
1/2 tsp garam masala powder
Ghee
10 curry leaves
METHOD
Marinate the chicken with the ground masala for few hours ,add salt to taste.
Then remove the chicken pieces and shallow fry in ghee till almost done, reserving the remaining marinade.
Add 2 tbsp ghee to the pan. Add the reserved marinade , 10 curry leaves, little amount of water and stir fry.
Once the masala is cooked add the chicken pieces , chilli powder and garam masala powder, add salt if required and cook till done.
