Chicken Curry

Simple chicken curry with just basic spices served with Coconut Rice . Chicken curry.

Ingredients 500 gms Chicken pieces 2 red Kashmiri chillies 1tsp coriander seeds 1/2 tsp fennel seeds 1/2 tsp pepper corns 6 curry leaves 1/4 tsp turmeric powder 5 cloves garlic a bit of tamarind 1 medium size onion 1 javitri ( mace flower) grind all the above to a paste with some amount of water. Ingredients 2 2 tomatoes finely chopped 2 medium onions finely chopped 2 medium size potatoes chopped Method Marinate the chicken pieces with chilli powder, coriander powder, pepper powder and salt to taste. Heat up some oil in a vessel. Add the finely chopped onions and stir fry till lightly browned. Then add the finely chopped tomatoes and cook till soft. Then add the ground masala and cook for a minute on medium flame stirring occasionally. Add the chicken pieces and chopped potatoes. Add some amount of water. Allow it to come to a boil. Lower the gas and cook till done. Adjust the seasoning.

For the coconut rice Ingredients Take 1 cup rice washed well ad soaked for 10 mins. 25 gms coconut milk dissolved in 11/2 cup lukewarm water. 1maggie soup cube few curry leaves Method Add a tbsp of ghee , stir fry the rice for 1/2 a minute. Add the coconut milk , soup cube and few curry leaves. Allow it to come to a boil. Lower the flame , cover and cook till done.
