A Simple vegetarian meal. Brown Channa Masala with East Indian bottle masala and Raw Mango Curry with Purish Masala
Channa Masala
Ingredients
300 gms brown channa.
Soak previous night .
then pressure cook on high one whistle then for 25 nins on low flame. Reserve the water.
Ingredients
6 Cloves garlic finely chopped
1/2 inch ginger finely chopped
2 to 3 green chillies finely chopped
3 sliced onions
3 tomatoes finely chopped
2 to 3 tbsp bottle masala
1/2 tsp garam masala powder
Few curry leaves
1/2 tsp amchur powder
1/4 tsp turmeric powder
1 tbsp jaggery powder
2 tomatoes chopped
2 tbsp desiccated coconut
1/4 cup finely chopped coriander leaves
Method
Add oil to a vessel, once. hot add the curry leaves, finely chopped ginger, garlic and green chillies. Stir fry lightly till aroma arise, then add the sliced onions and fry till translucent. Add in finely chopped tomatoes and cook till soft.
Add next the Bottle Masala, turmeric powder, garam masala powder and amchur powder. Add some of the reserved cooked channa water. Salt to taste. Cook for a minute o low flame. Now add the brown channa .
Mix well. Mix in the jaggery powder , coconut and finely chopped coriander leaves.
Purish Curry
2 tbs coriander seeds
1 tsp cumin seeds
1 tsp pepper corns
1/4 tsp turmeric powder
1 onion
3 garlic cloves
GRIND TO PASTE WITH SOME AMOUNT OF WATER.
Ingredients
8 to 10 green chillies slit into half
200 ml coconut milk
1 green mango peeled and chopped
Method
Add oil, when hot add the ground masala and 1/2 cup water.Allow to come to boil. Add the chopped green mango along with the seed.Once almost done,add 1 tbsp jaggery powder, green chillies , coconut milk and salt to taste.Cook for another 2 mins.
