Cauliflower Peas and Potato are a perfect match. I have added cashewnut powder and roasted spices to this mix veg recipe along with a puree mix of onion ,tomatoes and green chilli.
Served with Rice bhakri or chapatis / East Indian hand breads.
INGREDIENTS
400 gms chopped cauliflower 100 gms peas 200 gms potatoes. Cut into wedges and shallow fried
For the GRAVY Stir fry in little oil all the ingredients below 2 big onions sliced 4 small tomatoes sliced 1 green chilli roughly chopped Once done , allow to cool then puree without any water and keep aside.
10 cashewnuts dry roast then powder and keep aside.
Dry roast the below spices and powder it 1/4 tsp all spice 1/2 tsp fennel seeds 1/4 tsp methi seeds
POWDER MASALA 1/2 tsp chilli powder or according to taste 1/2 tsp pepper powder 2 tsp corriander powder
3 tbsp kasuri methi 1/2 tsp garam masala powder
METHOD
Heat up some oil. Add the onion and tomato puree mixture, cahewnut powder , and all the powder masalas also the fennel,methi and all spice powder mix and salt to taste. Mix well. Allow to cook for for a minute. Add the cauliflower and peas. Allow to cook on low flame till almost done. Lastly add the fried potato wedges, kasuri methi and garam masala powder.
FOR THE RICE CHAPATIS/EAST INDIAN APAS
INGREDIENTS 200gms rice flour 1 cup water Salt to taste Extra water for kneading
METHOD Heat up the 1 cup water with little bit of salt. Once it comes to boil add the rice flour and the flame to low. Keep mixing till u find like bread crumb mixture. Switch gas off. Cover with lid and keep. Once lukewarm add water little by little to make a soft dough. Make into small balls. And roll out into round shapes like chapatis. This is quicker and easy rather by hand. gentle rolling. Heat up a pan. Roast these apas . Brush with little bit of ghee.
