Carrot Cake

Love a Carrot Cake , here is a recipe using almond powder and flour along with raisins , cinnamon and spice mix.

The spice mix usually consist of cloves, cinnamon , cardamon and nutmeg. A ready to use spice mix is available easily at all baking stores. If you would like to make this spice mix at home , then here are the measurements: 100 gms cinnamon, 40 gms cloves , 40 gms cardamon and 20 gms nutmeg. lightly roast these spices, allow to cool and then grind to a fine powder.

INGREDIENTS 30 gms almond powder (take 30 gms of almonds and powder it in a dry grinder) 100 gms flour 100 gms raisins ( chop the raisins fine) 130 gms carrots grated 130 gms caster sugar 100 ml oil 1 tsp baking powder 1/4 tsp soda bicarbonate 1 tsp vanilla essence 2 small size eggs 1/4 tsp Spice mix 1/4 tsp Cinnamon powder Extra flour for dusting


To the mixing bowl add the oil and eggs .mix both the ingredients well using a hand whisk. Now add in the sugar whisk for a creamy texture Add in the vanilla essence.

Sift the dry ingredients- plain flour , ground almonds, sodabicarb, baking powder , spice mix and cinnamon powder together.

Add a tbsp at a time the dry ingredient mix. And whisk well.

Now fold in the grated carrots. Dust the finely chopped raisins with little plain flour . Fold in the finely chopped raisins dusted with flour.

Brush a baking tin with oil. Line it with a baking paper. Pour this batter into the baking tin Bake in a preheated oven at 180degrees Celsius. Till done Total time 1 hr.

You can decorate the cake using fondant Or just serve plain Or drizzle with a glaze A mixture of sifted icing sugar little warm water to make a slightly runny paste with a drop of vanilla essence.
