Carrot And Raisin Cake that is lightly spiced with cardamon, cinnamon and nutmeg with a basic honey and cardamon glaze .
A perfectly moist and delicious cake . You can also go in for red carrots instead of orange . If you like your cakes not too sweet you can replace the 150 gms brown sugar to 120 gms.
You can also replace the plain flour for self raising flour.
Ingredients 200 gms Maida (plain flour) 90 gms grated carrot (used orange carrots approximately 4 carrots ,peel of the skin ,wash well then grate) 50 gms raisins cut into two pieces using a kitchen scissor 150 gms brown sugar 50 ml honey 3 eggs 1 tsp cardamom powder 1 inch cinnamon powder 1/4 tsp nutmeg powder 1 tsp baking powder 1/4 soda bicarbonate 200 gms butter
Method The double boiler method ( place a small size vessel on the flame, fill the vessel with water, just half . Place a slightly bigger vessel over the small vessel filled with water. )
Method Using the double boiler method, add the butter and sugar into the slightly bigger vessel and keeping stirring till the butter and sugar melts. Remove the vessel and keep to cool.
In another vessel whisk the 3 eggs lightly using a hand whisk. Add next the honey and whisk again.
Sift the maida, cinnamon powder, cardamom powder, nutmeg powder, baking powder and soda bicarbonate together.
Add the sifted flour mix to the egg mixture. Fold in , then add the melted butter and brown sugar, whisk well using a hand whisk. Whisk well till everything is well incorporated.
Then fold in the grated carrot and the raisins using a spatula.
Line a loaf tin with parchment paper or Brush it with oil and dust the loaf tin with flour ,dust out all the excess .
Pour the batter into the loaf tin 10"x 5" bake at 180 degrees Approximately 40 to 45 mins depending on the type of oven
Some of the batter I put in cupcake moulds , got 3 cupcakes. Cupcakes took approximately 25 mins
FOR THE GLAZE For the glaze Icing sugar A tsp of honey Little milk A pinch of cardamom powder
Take approximately 4 tbsp of icing sugar, a tbsp of honey and add milk a tsp at a time to make a thick glaze.
For garnishing the cake
1 small orange carrot grated
Add 2 tsp of icing sugar and heat this on a pan on low flame, add a pinch of cardamom powder . Stir fry this till all moisture dries up .
Add the glaze on the cake, add the sweet grated carrot mix on the glaze.
