Blueberry Cupcakes

Cupcakes prepared with Blueberry fruit filling and with a simple vanilla glaze.

Ingredients 100 gms plain flour 1/2 tsp baking powder 1/4 tsp soda bicarbonate Sift the above dry ingredients together keep aside

25 ml oil 1 egg at room temperature 50 gms powdered sugar 1 tsp vanilla essence 100 gms blue berry fruit filling 2 to 2 and 1/2 tsp of lukewarm water

METHOD Take a deep bowl. Add in oil and egg and whisk well with a hand whisk. Then add in the powdered sugar and whisk again till a creamy texture.

Add vanilla essence , whisk well. Add a tbsp a time the sifted dry flour mix. Mix well with a whisk. Lastly add the blue berry fruit filling and start folding with an addition of 2 to 2and 1/2 tsp of lukewarm water.

Brush cupcake moulds with oil. Dust with plain flour. Add the blue berry mix to the moulds leaving enough space for it to rise.

Bake in a preheated oven at 180degrees for approximately 30 mins or till done.

Once cooled. Take a pipping nozzle and at the centre of the cupcake place the nozzle pressing down and circular motion to make a hole.

Add some blue berry fruit filling into the holes.

For the vanilla glaze

Combine 1/2 cup icing sugar ,1/2 tsp vanilla essence and 5 gms unsalted butter and 1/2 to 1 tsp lukewarm water or sufficient enough to form a firm paste. Stand bowl in a double boiler /over a vessel of simmering water and stir until icing is smooth and glossy. Remove from the heat. Spread the icing over the cupcakes. Top the glaze with some blueberry fruit filling.
