Vegetable Stew {Recipe 2}

A vegetable stew with mixed vegetables of French beas , carrots , peas and potatoes, spices and dried herbs rosemary and oregano .









Ingredients 2 tbsp coriander seeds 1 tsp cumin seeds 1 tsp pepper corns 1/2 tsp turmeric powder 3 cardamom 2 inch cinnamon 1 bay leaf 1/4 tsp nutmeg powder 1 tsp dried oregano 1 tsp dried rosemary 6 medium size cloves of garlic 1 tbsp finely chopped ginger 1 tbsp Worcestershire sauce

Roast the coriander seeds, cumin seeds , pepper corns, cardamom , cinnamon, bay leaf and cloves. Stir fry 1 medium size onion sliced. Add the turmeric powder, dried oregano, nutmeg powder and rosemary with some amount of water grind along with the roasted spices and stir fried onions.



For the vegetables 100 gms french beans 100 gms green peas 2 carrots ( 200 gms) 1 big size potato chopped. 5 to 6 cloves of garlic 1 tbsp finely chopped ginger

2 medium size Onions finely chopped 300 gms tomatoes peel off skin and chop finely 1 stock cube 2 green chilies slit


Method Heat up oil in a vessel. Stir fry ginger garlic till lightly brown then add onions and fry till light brown. Then add the finely chopped tomatoes with some amount of water and allow to cook on medium flame till soft. Add now the ground masala and cook for a minute. Add the stock cube , green chilies and the vegetables with some amount of water and allow to cook till done
