A quick Vegetable Biryani with a mix vegetables and paneer (cottage cheese) using mixed spices and Biryani masala.
INGREDIENTS 1
2 cups basmati rice cook and keep aside
INGREDIENTS 2
11/2 Tsp Biryani masala { I used Shaan Biryani masala}
few french beans finely chopped
1 carrot finely chopped
200 gms paneer cut into cubes and shallow fry lightly.
INGREDIENTS 3
15 cashew nuts
1 onion
make a paste of the above two ingredients together adding some amount of water.
1 tomato sliced
2 onions sliced and browned
1 tsp chilli powder
1 tsp Coriander powder
1/2 tsp pepper powder
1/2 tsp cumin powder
1/4 cup coriander leaves finely chopped
few mint leaves finely chopped
1 tsp Ginger garlic paste
METHOD
Add 2 tbsp ghee to a pan. once hot add the cashew nut and onion paste and cook till lightly browned. Then add the sliced tomatoes and some amount of water and cook till tomatoes are soft. Add ginger garlic paste, some fried onions , chilli powder, Coriander powder, pepper powder and cumin powder, stir fry. Now add the Biryani masala powder and vegies and allow to cook on low flame for a minute. Add the paneer and mix well.
Lastly mix in the cooked rice and the finely chopped Coriander leaves , mint leaves and remaining fried onions..
