Sweet Corn Soup – Comfort in a Bowl

A comforting warm bowl of homemade sweet corn soup for dinner. This recipe uses fresh corn kernels and a fragrant blend of garlic, ginger, green chillies, spring onion, fresh coriander and fresh turmeric to create a soothing yet vibrant soup.


Ingredients

To Boil the Corn:

4 corn cobs – remove the kernels and bring them to a boil

Once cooked, drain and reserve the cooking liquid

Set aside the kernels, reserving 2 cups for the paste

( Used 200ml measuring cup)


For the Paste:

2 garlic cloves (use 1 if large)

2 green chillies

½ inch ginger

1 inch fresh turmeric

2 cups boiled corn kernels (from above)

Just enough water to grind to a smooth paste


To Prepare the Soup:

120 grams spring onion – finely chop the bulbs and greens separately

1,250 litre of water (use the reserved corn liquid + regular water)

1 tsp coriander powder

¼ tsp cumin powder

Pinch of pepper powder

1 or 2 stock cubes, crumbled (as per taste)

½ cup finely chopped fresh coriander leaves


Method

1.Heat a little oil in a large pot. Add the finely chopped spring onion bulbs and sauté until translucent.

2.Stir in the ground sweet corn paste and fry for about a minute to release the aromas.

3. Pour in 1,250 litre of water ,stir well.

Add coriander powder, cumin powder, pepper powder, and crumbled stock cubes. Bring to a boil.

4. Add the remaining boiled sweet corn kernels. Cook the soup on medium heat for 15 minutes.

5. Add finely chopped coriander leaves and the spring onion greens. Let the soup simmer for another 15 minutes.

Serve hot, just as it is or with a light snack on the side.

Cheesy Garlic Bread – Irresistibly Buttery, Cheesy & Flavourful

A warm, crisp slice of cheesy garlic bread paired with the sweet corn soup.


Ingredients

40 grams finely minced garlic

80 grams butter

20 grams cheese or cheesy melt

1 tsp dried oregano

Coarsely ground pepper – to taste

Chilli flakes – to taste

10 dinner rolls (or use sliced bread or any bread of your choice)


Method

Prepare the Garlic Cheese Spread:

1.In a bowl, mix together minced garlic, butter, cheese, dried oregano, pepper, and chilli flakes until well combined.

2. Slice the dinner rolls in half (or use slices of bread of your choice).

3. Evenly spread the cheesy garlic mixture over the cut side of the bread.

4. Cook to Perfection:

Oven Method: Bake until golden and crisp to your liking.

Stovetop Method: Toast on a pan until the bread is crisp and the butter has melted.
