Pomfrets stuffed with Frithad Masala an East Indian Masala
INGREDIENTS 4 Pomfrets ( cleaned and washed well) Make slits on both sides of pomfrets (like pockets to enable fill the sides with the masala)
INGREDIENTS 2/3 whole Kashmiri chillies 1 tsp corriander seeds 1/2 tsp cumin seeds 1/4tsp turmeric powder 1 small piece cinnamon 1/4tsp khus khus 1/2 tsp pepper corns 2 cardamom 3 cloves 1/4 tsp teel 2 tbs dessicated coconut roasted 1 Tbsp ginger garlic paste 1 onion sliced and fried Roast the dry spices then roast dry the dessicated coconut . Add little oil and fry the 1 onion sliced till light brown. Small piece Tamarind Grind all of this together to make the masala.
METHOD Add oil to a pan. Add the masala and fry the masala adding very little water. Add salt to taste. Fry for 5 mins. Allow to cool
Fill this masala into the slits made on both sides of the POMFRETS. Dust with a mix of rice flour and a bit of semolina. Shallow fry.
