A biryani prepared with sprouted moong and button mushroom. A simple basic green masala prepared along with some spices to make this biryani. A good one pot meal served with raita
INGREDIENTS 200 gms Sprouted moong 200 gms button mushrooms 2 cup basmati rice (half cook and keep aside) 20 gms corriander leaves 10 gms mint leaves or few mint leaves 1 geen chilli Grind to a paste the coriander leaves,mint leaves and chilli and keep aside 2 tbsp ghee 2 small onions finely chopped 2 tsp ginger garlic paste 1/2 tsp garam masala 1/2 tsp cumin powder 1/2tsp pepper powder 1/4 tsp turmeric powder 4 tbsp curd
METHOD Make 4 slits in the mushrooms. Marinade with 1 tbsp curd, chilli powder, pepper powder and garam masala and little salt. Add 1 tsp ghee to a pan. Fry lightly these mushrooms and keep aside once done Add 2 tbsp ghee . Add the finely chopped onions and stir fry till lightly browned. Then add the 2tsp ginger garlic paste and stir fry. Add now the ground green paste and stir fry on low heat add the garam masala, cumin and pepper powder, turmeric powder and 4 tbsp of curd and mix well ,stir fry on low flame. Add in the sprouted moong mix well and cook on low flame stirring on off. After a minute add the half cooked basmati rice and the cooked mushrooms , mix well.Cover and allow to cook on low flame for 5 mins Garnish with coriander and mint leaves and fried onions.
