Mango Pancakes

These mango pancakes are prepared with fresh mango puree , flour , eggs and mango essence


2 cups plain flour

200 gms mango puree

1 tsp mango essence

1 cup caster sugar or powder sugar or add sugar according to taste

(Add quantity of sugar to your liking. My kids prefer it a bit sweet)

4 tbsp lukewarm water or milk

1 tsp baking powder

1/2 tsp soda bicarbonate

2 eggs

2 tbsp melted butter


Whisk the eggs and sugar together briskly using a hand whisk. Add in the essence and mango puree mix well. Sift the flour ,baking powder and soda bicarb together. Add tablespoon at a time the sifted flour mix to the egg mixture and keep whisking. Now add the 4 tbsp of lukewarm water or milk and melted butter mix well.

The batter should be thick for soft fluffy pancakes. In case mango essence not available use vanilla essence.

Heat up a nonstick pan with some butter and little oil. Add 2 ladle spoon of batter and let it cook. Then flip to other side. Cook on medium flame.

Serve with chopped mangoes and mango puree


Spiced glaze

Sifted Icing sugar with little water and a bit of spiced powder or cinnamon powder

Mix well.
