Ladyfinger And Potato stir fry

A Basic stir fry using East Indian Bottle Masala and other spices.


2 onions sliced

2 tomatoes sliced

2 Tsp East Indian bottle masala

1/2 Tsp chilli powder

1/2 Tsp turmeric powder

450 gms bhendi / Ladyfinger chopped

(Wash ladyfingers well and pat dry each of them well )

3 potatoes chopped

4 to 5 mashed garlic cloves


Heat a pan with some oil , add a pinch of salt and shallow fry the potatoes in batches.

Remove and keep aside. Add very little oil and shallow fry the ladyfinger vegetable in batches too, this helps to remove the stickiness.Remove and keep aside.

Add some oil and stir fry the mashed garlic cloves till lightly brown. Next add the sliced onions, saute till translucent. Mix in the sliced tomatoes and saute. Add the chilli powder, turmeric powder, East Indian Bottle Masala and 1/4 cup water and allow tomatoes to cook. Now add the chopped and shallow fried ladyfinger vegetable , salt as required mix well. Allow to cook for 2 mins. Lastly add the potatoes and salt only if required again.
