Healthy Almond Ragi Pancakes

Ingredients:
1/2 cup ground almonds (almond flour)
1/2 cup ragi flour
1/2 cup ground oats
2 eggs
3 tbsp brown sugar
2 tbsp coconut oil (plus a little extra for cooking)
1 tsp vanilla essence
1/4 tsp pinch of salt
1/4 tsp baking powder
1/2 cup water ( 100 ml) (as needed for nice batter consistency)
Method:
In a bowl, whisk the eggs , brown sugar and vanilla essence well until light and slightly frothy.
Pour in coconut oil and mix well.
Add a pinch of salt and mix everything together.
Add ground almonds, ragi flour, baking powder and ground oats.
Gradually add water to form a smooth, pourable batter (not too thick, not too runny).
Heat a non-stick pan and lightly grease it.
Pour a ladle of batter and gently spread into a small pancake.
Cook on medium heat until bubbles form, then flip and cook the other side until golden.
Serving Suggestions:
Tips :
Drizzle with honey or maple syrup
Top with fresh fruits like banana or berries
Add a dollop of yogurt for a wholesome touch
For extra flavour, add 1/4 tsp of cinnamon powder
You can replace brown sugar with honey or jaggery
