My most loved fruit has always been guavas. Add some chilli powder, pepper and salt to it , it's just wow!
A few years ago, I came across a guava Cake while watching tv. I said to myself, I need to make this. The guava cake that the chef made , the guava pulp sank to the bottom of the cake This is exactly what I did not want for my cake.
So here is my version of this Guava Cake . Here I have used a guava crush , fresh guava pulp and reducing the sugar . Though , I have stuck to adding guava jam on the cake. To make this guava jam , I used the same method as I usually make my guava cheese/ sweet.
Ingredients
125gms flour
100ml guava crush
2 eggs
1/4 cup oil
1 tsp baking powder
1/4 tsp soda bicarb
1 tsp cardamon powder
40 gms powder sugar
1/4 cup guava stock ( water in which the guava was boiled)
100 gms guava puree ( puree of 1 medium size guava)
Method
Step 1
Bring 1 guava to a boil , adding just enough water. Once soft , remove from the water ( stock) . Remove the seeds from the guava slices . Place these seeds in a strainer and run it to remove maximum pulp from it , discard the seeds. Add the guava slices and the pulp which you gathered from the seeds to a mixie jar and puree well.
Total weight I got ( 100 gms) and keep aside.
Step 2
Add oil to a vessel , add the 2 eggs and whisk well together. Add the powder sugar a whisk well again. Now add the guava crush and whisk well. Add the guava puree and mix well using the hand whisk. Add in the cardamon powder and whisk well.
Step 3
Sift the flour , baking powder and soda bicarbonate together, add it to the batter and whisk till well incorporated. Add the guava stock and mix well.
Step 4
Using a 6 inch diameter tin lined with parchment paper, bake in a preheated oven at 160 degrees till done . Allow to cool
Approximately 40 mins , depending on the type of oven
Step 5
For the guava jam
Ingredients
2 guavas
Powder sugar
1/4 tsp lime juice
1/4 tsp clarified butter
Take 2 guavas , Bring to a boil till soft . Remove from the stock and puree. Weigh the puree and add an equal amount of powder sugar or slightly less ( for example: 100 gms guava puree you can add 60 gms of powder sugar or 100 gms powder sugar)
Add the powder sugar and guava puree to a pan and cook on medium flame, stirring continuously. Once it starts to get thick and slightly leaves the sides of the pan add the lime juice and clarified butter.
Mix well and remove. Allow to cool.
Spread this on the cake , sprinkle some cardamon powder and icing sugar.
