This Ginger Wine Cake is a rich, moist, and flavourful cake made with soaked dry fruits, ginger wine, and spice mix. A perfect cake for Christmas, festive occasions, or when you want something special with your tea.
Ginger Wine Cake Recipe
Soaking Preparation (1 week in advance)
¾ cup raisins
¾ cup seedless currants
300 ml ginger wine
Soak the raisins and currants in ginger wine for one week.
After soaking, strain the dry fruits and reserve the wine liquid.
Ingredients
1 cup ginger crystals, finely chopped
250 grams flour (maida)
250 grams soft butter
250 grams fine brown sugar
½ cup reserved soaked wine liquid
3 eggs
2 tsp baking powder
¼ tsp soda bicarbonate
½ cup ginger wine
1 tsp ginger powder
½ tsp spice mix powder
Method
Preheat the oven to 180°C. Grease and line an 8 x 10 inch cake tin.
Sift together flour, baking powder, soda bicarbonate, ginger powder, and spice mix powder. Set aside.
Lightly whisk the butter. Add the fine brown sugar and whisk till well combined.
Add the eggs one at a time, whisking after each addition.
Add ½ cup reserved ginger wine liquid and whisk well.
Add the sifted flour mixture and whisk gently.
Add another ½ cup ginger wine and mix till smooth
Dust the soaked dry fruits and chopped ginger crystals with a little flour.
Add them to the cake batter and fold gently.
Pour the batter into the prepared cake tin.
Bake at 180°C until done or a skewer inserted comes out clean.
Cool completely before slicing.
